Goat:
Chèvre: Chèvre is a soft goat cheese that originates in France. It can be used both as a very fresh and soft cheese, or aged and crumbled. As it ages, the "goaty" flavor becomes more prominent. It can be eaten plain or with many varieties of seasonings, herbs, fruits, or vegetables. Uses for this cheese include putting on bagels, salads, in dishes, or eating on a cracker. Feta: Feta is a Greek cheese originally made with sheep milk. Since we don't milk our sheep, we make it with goat milk. It's a saltier cheese that is sometimes dry and crumbled and also in cubes that's pretty soft. We make the softer variety. We also make feta that goes into a salt-water brine which extends it's life and increases the saltiness. Uses for this cheese include putting it on salad and eating it right out of the container. |
Cow:
Vache: Vache is a soft cow cheese that is made using the same process as Chèvre. It's mostly used as a soft cheese and lacks the strong flavor that some goat cheese can have. It can also be eaten plain or with many varieties of seasonings, herbs, fruits, or vegetables. Uses for this cheese include putting it on bagels, in dishes, or eating on a cracker. We've never tried cooking with it, but I'm sure it would be good there too. |
