Wild Greens

In these pages, you'll find descriptions, photos, and recipes for some of our local wild greens. Often these can be found far earlier than the earliest garden vegetables and can be a delightful freshness after a long winter of canned and frozen vegetables (or "fresh" vegetables that were picked last week in Peru).

Dandelions

You probably don't need a photo of this one and you've probably heard of dandelion wine. But dandelion salad?

Plantain

Different varieties of this are everywhere. Free salad about anywhere you go!

Purslane

A common garden intruder. Instead of weeding it, try eating it!

Lamb's Quarter

I bet you've seen these around, too.

Sow Thistle

Poke Weed

Very tasty greens when the plant is young, once it matures the berries are toxic - don't eat them!
